Temperatures : Aligoté & Bouzeron 10–12 °C (50–54 °F); Bourgogne Chardonnay & Santenay 11–13 °C (52–55 °F); Beaune 1er Cru 12–13 °C (54–55 °F).

Oxygenation: open 20–30 minutes ahead; a light decant can help young wines.

Aligoté & Bouzeron: 2–5 years for snap and crunch.

Bourgogne Chardonnay & Santenay: 3–7 years depending on vintage.

Beaune 1er Cru: 5–10 years for extra complexity.
